Michael,

The water used in brewing actually has very little effect in most cases.
Some British beer styles require a "harder" water (i.e. higher mineral
content), but the majority of commercial beer is made with filtered,
boiled water.

I'd suspect that the Carlsburg you drank here in the states was either
old and/or stored in a warm warehouse.  Most commercial beer is already
aged, so once it's been bottled it should be consumed within a few
months.  It also should be stored in a cool location, out of direct
light (sunlight, incandescent, laser, whatever).  When you shop for
beer, patronize locations that are air conditioned and store most of the
beer in the cases so the bottles don't get "light struck".  Also, try
and find dates on the cases or bottles.  I love Sam Adams Boston Lager,
but I recently drank a bottle that was 4 months past the date on the
label and it tasted nasty.
