I agree about the "tropicalize" effect you talk about, fitting your market.
I forgot to mention a "combination" effect, multiple themes in one:
There's a restaurant near my office named "Peking Tokyo". Combination of
Chinese restaurant and sushi bar. Actually has Chinese management and staff
plus Japanese sushi chef. Very popular at lunch, especially the Chinese
buffet which includes a variety of sushi rolls.
On a drive recently, next to the freeway found a combination Burger King and
Taco Bell under one roof. Bet they get a LOT of business from the families
arguing about what kind of food they want to have.
Gotta play to your audiences, I guess...

Tacos, burritos etc.. are not really American Creation, they are Mexican..
but tacos with yellow cheese, mayonnaise etc.. like the ones at taco bell
are something I wouldn't call Mexican food.. on the other hand they are not
bad, as a matter of fact they are good :) I go there and to other mex
chains on the states ones in a while :)
its like eve thing.. food from other places needs to be tropicalize to the
country.. its like Italian or french restaurants in Mexico need to have
the Mexican touch.. I heard some guy asking for tortillas in a sushi bar
here in Monterrey Mex :( imagine that
