Well, for one thing, you could ask them what they might do for an Irish 
Pub.  I mean...  Geez.  I might suck at design, but I at least come up 
with mental images of dark wood, dartboards, and shamrocks.  Also, 
leprechauns.

So, I guess my advice would be some "what is your first thought on..." 
questions.  Don't necessarily expect their best ideas, but they should 
be able to come up with something in the "Sane" range.
