To a certain degree, it depends on how much you want to spend. We bought a midrange Barracuda (a 300, I think) and we like it. This is actually the second one we've been on, since our previous colocation had one we paid to use.
There's hardly anything required to set it up -- plug it into the rack, tell it what domains to check, and repoint your MX records. You log into a web admin and move sliders around to change how picky it is. It is powerful enough to handle all our domains without a problem. It emails you reports of spam it's quarantined.
