The thing is that yes DDR is available for other play systems.  But the Wii
is the only one where the controls actually are motion sensitive.

Wii Sports, for instance, allows you to simulate boxing, bowling, tennis as
well as a few others.

DDR for the Wii will add hand motions as well as the foot motions.

Wii Fit will include a balance board.

It's a much more all around system for movement.  As a non gamer, it's the
only system that appeals to me.  And yes its really hard to find.  Their
manufacturing is not keeping up with demand.

So is the Wii really the best option in game consoles if you want to do
games for exercise? It seems hard to even find one for sale online at its
normal price, not sure what its availability in my area is. I just haven't
really even been following what's been going on with the console market much
these days, so not real sure what the others are capable of, I just don't
think I want to pay $300+ for a console that's still not supporting HD.
There's a good deal on a 360 Elite bundle at Amazon now that includes the
HD-DVD player and a bunch of HD movies, not sure I wanted to spend that
much, but might be worth it to get HD support. And DDR is already available
for the 360, so I won't have to wait on it!
