Apple's multitasking is specific features can be multitasked. For example Audio Streaming can keep going in the background, as can Positional Awareness (A-Gps, GPS etc.). But it seems that something computationally intensive would not continue in the background.
Perhaps the reason for this is to prevent the runaway overheating and battery use that you notice. I always thought not having some form of Multitasking was a negative for the iPhone.
