Humanitarian aid, as provided by the UN and others, is delivered through normal channels all of the time. These people stated quite clearly that they were not focused on humanitarian aid but on breaking the blockade. Israel offered to accept and deliver the cargo but the flotilla organizers refused.
As a side note, Egypt, who controls the border on the west, refused an aid convoy along the same lines a few months back. The requirement that aid goes through the proper channels and is restricted to non-duel use materials is not only on the Israeli side. People seem to forget Egypt is part of the blockade as well.
