There is not a distro "trimmed down" to just a mail server. The closest I've gotten (Ignoring Debian and Slackware due to lack of end user helpfulness) is the redhat selection of "Email server" during install. (The screen that says "web server, desktop or chimanzee, etc"). None of the distros install qmail by defualt, so your best bet is to go with a box that has a newer kernel, relatively secure out of the box (Both redhat and SuSE do this pretty well, but redhat 7.2's firewall rules are especially nice) and just clean off the extra trimming after selecting "email server" during install (uninstall sendmail =]) and then you being the treck for Qmail, which is not fun, or easy. Sendmail is easy, but has a pretty bad rap on the security front.
