If you want a very stripped down you could look at e-smith
(www.e-smith.org).

It's an Internet Server/Gateway distro, VERY easy to install and get
running.  We installed it on a P166, and it happily ticks along on a
headless box.  Very rarely have to touch it.

It includes qmail, imap, etc etc.   Love it!!  :^)
