This might sound like Catch22 but there will probably be clues in the
ColdFusion Application and Server logs even though nothing got written to
them at the weekend.  Look at the very latest entries there particularly the
Application logs.  Just out of interest what is usually in the logs?

I've had 0 byte mail files in the spool directory in CF 5  and it didn't go
to 99%. Worth checking though.
