Programming isn't surgery - no one's going to die. If a programming environment is set up correctly, with development, staging and production environments, with proper QA, this shouldn't be an issue. Second, the problem with hypotheticals is that, well, they're hypothetical. I've never encountered two job applicants who were so comparable, I don't think. If they appear so comparable, you're probably not asking the right questions in the interview process.
