On our 2003 servers, we use wildcard certs as well as host headers. This works fine.
The only issue is when you try to access a non-secure web site using HTTPS. You get a cert warning that the site and the cert don't match. It shouldn't be an issue since you never really told anyone that the site was secure to start with. However, for the sites that do use SSL, it works fine.
