It isn't a 'lack' of evening and weekend support, it is that the Senior tech (who knows about the Coldfusion thingy) is off nights and weekends. According to the tech I spoke to, if the server goes offline on a weekend (and cf won't restart) they call him at home and have it fixed within the hour... sozohosting.com
Now, assuming that you cannot judge an entire company by the words spoken in just a few minutes on the phone (especially a tech guy), I am willing to assume that they either... had a turnover, this guy hasn't been trained on CF yet, or he was talking out of the side of his arse. The website if very specific that they 'allow' cffile and cfdirectory to be run, so by contract I am assuming that they don't allow cfobject, createObject and the others that can be explicitly restricted in the admin settings. Or, at least I will assume that until (and if) I speak to their senior tech next week. I am realizing 2 things now. 1. The group of people here on this list would probably be a great group of guys to get together in a room during the 'Big Smoke' in Las Vegas and just shoot the 'breeze' with. 2.
