It makes sense for this to be a mail-related problem, given the timing. I've never tried to run CF on Linux but what's prolly happening by the sound of this is one process goes to check the spool (does it have any mail in it?), it hangs -- which get detected by the parent process and it restarts itself... I do recall some sort of "restart server if x number of threads become unresponsible" setting in the administrator in CF5.
Also take a look at the contents of the mail spool. Are there any unusual emails (ie ones with funny recipient addresses / headers etc)? I very vaguely recall something about a blank email in the spool causing grief; it may have been talked about on the list about a year or more ago iirc (might be worth searching the list for it).
Hope you find some of the above helpful. Apologies if I said incorrect and / or dumb things, and / or stating the obvious.
