If the client supports HTML...That's a big "If".... If you really are *that* time strapped why not just link to a blank form where they fill their information in the blanks and then it just emails you a dump of the form struct?
IMO this not worse for usability but in fact much better.... how many people have filled in online forms on a webpage, and how many have followed a neat structure in an email? Hell, I haven't never followed a neat structure in an email.
It least with you a form you have a consitent format... Add a wee bit of qForm javascript validation (or cfform) then at least your data entry person can sleep at night.

And the client would hit reply, and lets say correct his last name and send it back, I could then parse this.. That's if this crazy lunatic idea of mine would even come close to working ;-))
