Hahahah. Your right ... and I've read an article before that the word chopsuey 
was even found in menu's in restaurants in Manila even before the 1940's ...

The Chinese is the oldest culture there is. In the Philippines, there is a 
story of Limahong (Lim Ah Hong, Lin Feng, Lin Tao Kien), a Chinese Pirate who 
terrorized the northern provinces in the 15th century and tried to capture 
Manila. When I was growing up (4 centuries later), people still told the story 
of Limahong ... of course most of them were exaggerated but the story is there.

We chinese will never serve chopsuey, and the name itself is bad. They
might be mixed from the cut out pieces during preparing main dish and
those garbage meant to be thrown away are being recycled to feed
another customer.  A good example of how chinese restaurants cheating
foreigners - in cantonese '扼鬼佬'.
