My first suspicion would be the temperature sending unit; any idea how old it is? The gauges are usually pretty good and the factory manuals often list the resistance-temperature relationship for testing purposes. You should be at least at 180 unless you have a phenomenal cooling system and a 160 t-stat. ;^)
