I agree.  Mine is a 327 but I run, under those conditions, right about
180.  In town, on the other hand...

My first suspicion would be the temperature sending 
unit; any idea how old it is?  The gauges are usually 
pretty good and the factory manuals often list the 
resistance-temperature relationship for testing 
purposes.  You should be at least at 180 unless you have 
a phenomenal cooling system and a 160 t-stat.  ;^)
