They
can't drive it away until it's insured under their name, and that can't happen
until after they buy it. Anybody who is coming from out of state and trying
to make the transaction happen in one day is not legit. That's just not how
it works and these guys know that.

Anyone who wishes to show up and buy a car and drive it away should be prepared to do a wire transfer from his bank account directly to yours. He can tell his bank ahead of time what he is up to and so can the seller, and then the buyer can show up and drive the car make the deal and go with the seller to his bank an initiate the wire transfer. These things take time. It can be done within a few hours or a day, but having to stay overnight is not unusual and both sides should be prepared for that possibility. Showing up with the cash means the guy is serious but if hes going to present a negotiable instrument the car and title should not be delivered until your bank has confirmed clearance.
