[Chevelle-list] Carb size?

I have just finished rebuilding my BB with a 496 stroker.  My current 
carb is a Edelbrock 750.  What would be the minimum size to safely run 
on the street and run down the strip?   Has this been addressed in the 
archives?  Link?
