Indeed this explains the behavior that I see. With "mount -F smbfs" I cannot 
edit the file while with browse from Nautilus I can perfectly edit them. I do believe as

I'm thinking you may get some relief from:

6565851 mmap support for CIFS client (and use page cache)

(That's probably why gedit isn't happy, but I haven't verified.)
