Fsarchiver is interesting in that it can restore to smaller partitions, but I'm really looking for something that could work with backuppc which already keeps current backups online automatically but doesn't have a good 'bare-metal' restore facility. I've done it by hand from a knoppix-type live CD but would like to come up with some convention for saving the disk layout that could be grabbed through backuppc's web interface to reconstruct the filesystems followed by ssh'ing the BackupPC_tarCreate command to the server to get the contents, and re-installing grub to make it bootable.
