RedHat Patches the kernel sometimes to add features and stuff but for the most part a make oldconfig should help with any changes and make a usable kernel for RedHat.
One thing about compiling your own kernel with Red Hat is that Red Hat turns on stuff you won't need and basically every module imaginable. Compiling your own will allow you to make a much more lean kernel.
