I would concur with Mark and combined with the corporate "image" of RH, its commercial market share, commercial partnerships and brand recognition, 7.3 would might be your best, and safest bet for the servers. Desktops....well that would be a bit different but I would imagine based on the others suggestions, Mandrake, Debian or even SuSe.
