I'd rather reserve the memory/cpu time for the tasks the server is intended for. If it's a web server, why cause possible slower delivery of the web pages simply for a nice interface...
But that said, it's a matter of personal preference. If you are accustomed to managing a server via a GUI, then the use of the resources would probably be justified by the ease/speed of management. If you feel comfortable enough with the CLI, then the GUI is unnecessary for a server. Unless, of course, you are building an X terminal server... My thoughts, not yours.....
