I think there is probably more than you would think :) Also, consider
that a package may include hundreds of programs :)
gcc and binutils
glibc (
autoconf (all that ./configure magic)
automake (all that lovely make install magic)
bash
all the glorious little utilities you can think of (hundreds perhaps?):
cat, tr, od, ls, cp, mv, dd, find, kill, pwd, hostname, etc..
anyway, I think you get the point :)
Here is a more complete list:
http://directory.fsf.org/GNU/
Quite interesting looking through that to see exactly what the FSF and
GNU support.

I guess I should reiterate one point... :)
Seeing as Gentoo box is source based, the gcc compiler plays a very important
role, and gcc is a GNU package. But, when you look at the number of packages
on my system as a whole, I believe the GNU packages constitute a very small
percentage...

I can understand this view to some extent, but agree with the underlying
meaning of the previous messages in this thread. The GNU parts are just a
part of the whole, there are other tools/resources in there that are not
part of the GNU project.
Personally I run Gentoo on my systems, and other than those packages that
are licensed under the GPL, I believe GNU plays a very small part on my
system(s) though I haven't done a thorough audit to be sure.. :)
From my perspective, I don't think anyone in our group is belittling GNU's
contribution to the success of Linux and open source (Mr. Stallman really
doesn't like that term... ). We recognize the importance of the FSF (It's
mentioned very well on our brochure), but to change our name to favor one
part of the whole doesn't make sense to me.
My thoughts.
