That's an easy one :-)  Here are 3 old-standbys:

1.) Grab your dad's cassette recorder (or if you have an mp3 player
with a line input, use that,) a blank cassette tape, and a cable to
connect the two (probably will need a stereo 3.5mm to RCA cable.)

2.) Substitute the cassette recorder for a second computer.

3.) [Not a good option, but I've been drooling over these for a few
years now] Substitute the cassette recorder for a DAT recorder:

Then when the recording is done, play it back to the computer and
you're gold.  This seems tedious, but if I'm not mistaken, its how
things used to be done.  In this case, your computer is acting as a
mixer and you are recording it onto something that was designed for
recording.  The computer then switches hats and acts as an editor
afterwards.

Whichever method you choose, Like Jon said, test it out first!  Losing
an interview sucks!
