I like cyrus with an LDAP backend.  There is nothing to stop you from
implementing Kolab in the "Ubuntu" way, except time.  Basically kolab
uses standard off the shelf packages with configs that tie everything
together.  You could install all the packages that kolab uses and then
try to replicate the configuration, but this is a lot of work.

The link above is a good start.  If you have no experience with Cyrus
then their maildir solution should work.

For SPAM and AV, google:

postfix+clamav
postfix+"grey listing"


Hope this gets you started.
