Hi Nick,
Much as I like Ekiga, it does not support white boarding. :-( So you
could only use it to text chat/VoIP. There is a beta Ekiga windows port,

Not sure whether you mean collaborative text (ie. two people
simultaneously editing the same doc with 2 cursors = cool!)

Apparently Abiword can do this:
