Personally, I always recommend Ubuntu. It's fast, stable, and has the best
community support of any Linux distro out there. You'll have no trouble in
that department (which can be a huge bonus).

That being said: the method for file transfer I'd use on a file server is
FTP - quick, dirty, and painless.
