Like most here, Ubuntu is my personal choice for both a server and a
workstation (and a close second for my music hobby).  I used to use
Debian quite extensively, but have since migrated to the K/Ubuntu camp.
 Under the hood things are pretty much the same as Debian, so a lot of
the Debian strengths apply to Ubuntu as well.

I also keep my domain server separate from my file server, though
initially they did reside on the same physical box (this was many years
ago, before you could buy a D-Link or Linksys firewall/router, and
before the explosion of worms et al.).

Unlike Mitchell I never suggest FTP.  The short short version is that
you should stay away.  Use SFTP/SCP instead which is based on SSH and is
already a part of your Linux box.  If your client machines are using
Windows, WinSCP and FileZilla are both excellent and free choices for
Windows.  OSX has command line support out of the box, and there is one
or two decent GUI apps, just use google.

If this is a file server on a local network, I personally use Samba as
it supports most OSs out there (my roommate's media PC is a Windows box,
which works nearly as well as my Linux laptop and Linux media PC, both
Kubuntu based incidentally).
