Computer parts aren't a problem as I've got lots hanging around, but I'm
looking for a recommended hardware set up and what version/distro of Linux
would be best to use to do this. I've got SUSE & Linspire already but am
debating Ubuntu.

Are you looking for a file server for an internal network?

What are you referring to when you want to host your own domain? A website?

The reason I ask, and it is not required, but I would recommend to keep a
webserver on a separate box from your internal file server to help reduce
risk of exposure if your website/server got compromised.

Cheers!
