I would probably favor the directional antennas, as others have suggested. SimpleWifi had a booth at DefCon with some interesting options - http://www.simplewifi.com, and relatively reasonably priced.

If I were in your shoes, I would likely start with 3 access points - one at each location, and bridge them to each other. But it sounds like you want a single access point that has the range to cover the other buildings. In this case, I don't think you have much choice but to boost the transmit power, and deal with more sensitive/directional antennas for reception. You can pick up wifi range extenders at Staples/FutureShop, etc. I've never worked with them so am not sure how well they work. I suspect they only cover the transmit side of things though.
