On our 34 (single spreader rig), we only have the baby stay on if we are
going to be racing / sailing in chop.  It's needed with the in-line
spreaders to keep the rig from pumping.  We also use it if it's breezy to
maintain bend in the mast.  We do end for end gybes, so it's not in the way.
If we did dip pole gybes, it would have to come off downwind.

I use the pole infrequently, so the baby stay is always rigged unless I'm
using the pole.
