Modern Unix's are going to require an MMU, with means a 030, 040 or a 020 if 
it has a  68851 PMMU. Of course processor support is not the only hurdle in 
putting anything other then the MacOS on them, for instance NetBSD has a good 
breakdown of supported, semi-supported and might be supported here 
http://www.macbsd.com/macbsd/macbsd-docs/machine-status/ however like the 
mac68k port its self, it does not appear to be as supported as some of the 
other arcatectures. They do still claim to more 68k Macs then any other Free 
OS.

Personally I'm happy with OS 6 and ZTerm for my Sun's, the terminal font is 
very readable.
