have you tried the USB to serial conversion kits? They do not require a USB driver for the printer end.
You install the USB/Serial convertor and set up the Serial end to communicate with your device.

The maker of my plotter/cutter is not going to produce a a USB driver for this older device, so a serial to USB conversion cable will not do the trick.
