More info:

The card is aha-2940u2b

Install from CD: No valid filesystems could be found (both computers)
In Rescue mode, pDisk can't see the hard drives (both computers)
In install from Hard Disk (just for the hell of it, to see the drivers): No
aic7xxx driver listed.

So, I'm lead to the conclusions that it can't find filesystems because it
can't see the drives, because it doesn't have a driver that is compatible
with the card. I'm running low on ideas. I still have gobs of patience
(luckily) but the new ideas on how to approach this are few and far between.

How could I get a driver that works and make it available to the system? I
don't have the option of making a boot disk (my company looted the zip
drives from the G3's and doesn't have them anymore) unless I get something
in ISO format that's bootable that I can burn to a disk on my Wintel box.

that's probably the issue then.  Do you have any idea what the card is?  I
don't remeber if lspci is on the rescue CD or not, you could try running
it or see what Apple System Profiler has to say about the card.

We had some G3's during 8.0 that used the aic7xxx driver (Adaptec)
