I have started cooking manicotti or lasagna without boiling the noodles first. When I stuffed the raw manicotti, I had no trouble at all. The noodles stayed together. Then you lay the stuffed shells in the pan, pour on the sauce, top with a little cheese if you wish, and chill them from about 4 hours to overnight. Then make sure they are completely covered, add a little water if necessary, and bake them as usual. No more noodles breaking or stuffing falling out. I wish I had known 25 years ago.
