Apple HarvestPound Cake with Caramel Glaze
2 cups white sugar
1-1/2 cups vegetable oil
2 tsp. vanilla extract
3 eggs
3 cups all-purpose flour
1 tsp. each baking soda, salt
1/2 tsp. ground cinnamon
2 medium Granny Smith apples - peeled, cored and chopped
1 cup chopped walnuts
1/2 cup each butter or margarine, brown sugar
2 tsp. milk
Heat oven to 350º F (175º C). Grease a 9" Bundt pan. In a large bowl, beat
sugar,
oil, vanilla and eggs with an electric mixer until light and fluffy.
Combine flour, baking soda, cinnamon and salt; stir into batter just until
blended.
Fold in apples and walnuts using a spoon. Pour into prepared pan. Bake
for 1 hour 20 minutes, until a toothpick inserted into crown of cake comes
out clean.
Allow to cool about 20 minutes, then invert on to a wire rack.
Glaze: Heat butter, milk and brown sugar in a small saucepan over medium
heat. Bring
to a boil, stirring to dissolve the sugar, then remove from heat.
Drizzle over warm cake. You can place a sheet of aluminum foil under cooling
rack
to catch drips for easy cleanup.
