My friend made this recipe as written a few weeks ago and it was terrible. He decided to try it again using 3 thicker chicken breasts, but they were definitely thawed. He said he put a little paprika on the meat and followed the recipe as written but cooked it on low for 4 hours. He said it was excellent. The sour cream and shredded cheese only added to it.

     Slow Cooker Black Bean Chicken




     2 cans black beans
     16 oz jar salsa
     1/2 cup brown rice (uncooked)
     1.5 lb chicken breast
     sour cream
     shredded cheese of your choice


     Place frozen chicken breasts in slow cooker.
     Pour beans, rice and salsa over chicken.
     Cook low 8-10 hours and serve.

     serve with sour cream and cheese if desired
