Pancake batter should be stirred just enough to blend the wet and dry 
ingredients.  A few lumps are expected.  I usually use a fork or wire wisp. 
You don't really need a blender or electric mixer.

Yorkshire pudding, one of my favorite holiday side dishes, needs to be well 
blended.  The air you beat into it helps it rise.  I find the newer electric 
mixers have beaters that are much smaller than they used to be.  If you want 
them as big as the standard GE mixer used to have, you probably have to buy 
a high end machine.  The bigger the beaters,are, the easier it is to get a 
smooth batter with lots of air.  Same goes for beating egg whites.

When i'm making yorkshire puddings, i generally mix the batter in a blender. 
i never get lumps that
