When I make hash browns I use a suggestion made on the Food Channel. I slice the potatoes into a bowl after cleaning them then season them and put olive oil on them. Then I put them in the microwave for 5 minutes before finishing them off on top of the stove. Since the potatoes are already cooked through the surfaces that hit the pan can crisp and I don't have the need to turn them. Another 15 minutes on top of the stove and those are ready to eat. I prefer to use my iron skillet when doing hash browns and I do put a little oil in the pan. The oil on top of the potatoes was to nail down the seasonings. I usually go heavy on red and black pepper and garlic powder for seasonings and cook an onion in the pan on the stove with the potatoes.
