I don't know about the color, Abby, but it does cook all the way
through, giving it the texture of cooked hamburger.  I used to make
meatloaf in the Crockpot when I had one with a little meat rack.
Putting it on the rack allowed the grease to drip down away from the
loaf.  I no longer have that Crockpot, and though I thought I'd saved
the rack, I cannot find it, so I've gone back to making meatloaf in a
meatloaf pan in the oven.  I really prefer it baked in the oven.  For
those who don't know, the meatloaf pan is the shape of a bread loaf
pan.  It has an insert with little holes along the bottom.  When you
put the meatloaf in the insert, the grease drips down into the outer
loaf pan, and you don't have to worry about draining it.  You can find
them in most places that sell cookware,--even in grocery stores.
