If you get crisp meat that tastes like ashes the color of that crisp area will be black because it's burnt. If the crisp area doesn't taste like ashes, then the color is brown. Because of the small amount of liquid remaining in an open crock pot after an hour's time generally two things are likely to happen. First, what's being cooked will actually be getting braised. Second, the sauce made by the cooking process is being reduced. The reduction of the sauce likely will increase flavor intensity of that sauce too.

For me, a burger, big or small, is browned, that is, crisp on the outside.

Does this happen to a meat loaf when you cook it in a crock pot or is it
all like the inside of a broiled burger?
