I do about the same except that I use a can of diced tomatoes instead of the
tomato paste.

Hi Sheila.
I have a rice cooker similar to yours and I use it a lot. Besides cooking
just typical rice in it, I often cook Mexican rice in it, which recipe I
got from this list. You just put all the ingredients in the rice cooker
pot and turn it on. When it is done, uncover and let stand for three
minutes and stir. It's ready
Here is that recipe.
Mexican Rice
Easy to make rice like you get at the mexican restaurant. Cooks up in
your rice cooker without any fuss, mess or stirring! Haven't tried it-
but could be made on the stovetop in a covered pot.
SERVES 6
Ingredients
1 cup rice (I used long grain rice)
2 1/4 cups low sodium chicken broth
1/2 (6 ounce) can tomato paste
2 tablespoons butter
1/2 cup onion, diced small
1 garlic clove, minced
1/2 (4 ounce) can diced green chilies
1 dash pepper
1 dash red pepper flakes
cilantro or parsley, for color
Directions
1combine all ingredients in rice cooker.
2cook according to manufacturer instructions.
3when cooking time finished let it sit uncovered for 3 minutes or so to
thicken.
4stir before serving.
By the way, I'm originally from Vancouver, Canada. I haven't been there
for about 40 years now.
