I've not made this before, but in most recipes, the meat makes a lot of it's own juice in the crockpot. If you cook it for the recommended time and don't overcook it should not be dry. Just some thoughts, maybe others have made this specificc recipe. But in general I always think recipes for the crockpot look a bit dry, but don't turn out that way. Hth.
