Pancake (Apple Cinnamon) Recipe
For 1 or 2 people:
1 cup Bread Flour or All Purpose Flour
1 egg separated
2 Tablespoons Cooking Oil
1 and 1/4 cups milk
1 teaspoon salt
3 teaspoons Baking Powder
1 Tablespoons sugar
1 Apple of your choice, peeled and cored. Sliced or cubed.
1 teaspoon Cinnamon
2 Tablespoons Brown Sugar
DIRECTIONS:
Separate the egg, putting egg white in bowl by itself. In a mixing
bowl, mix together flour, 1 Tablespoon sugar, salt, baking powder. Set
aside for a few minutes. Using mixer, on High Speed beat egg white until
soft peaks form. Then go back to dry ingredients and add milk, oil and egg
yolk. Mix with mixer until well mixed, scraping sides of bowl several
times. Start on a Low Speed and gradually go up to High speed. When the
batter is well mixed, add the beaten egg white and fold into batter.
Take apple slices or cubes and mix with 2 Tablespoons of Brown Sugar and
1 teaspoon of Cinnamon, in a small bowl. Set aside.
When the skillet or griddle is at the right temperature, put a half cup
of batter mix on to cook. Add 1/4 cup of Apple Mixture to pancake that is
cooking. Turn when the pancake is ready, and cook other side. On a griddle
cook at 350 degrees.
If batter starts to thicken to much, just add a couple Tablespoons of
milk, and blend into batter.
