A friend of mine makes something similar with cottage cheese. For a topping
she uses warmed applesauce, which is also good. Cheese based pancakes are
also a good menu item for diabetics as the protein to carbohydrate ration is
good on them.

Ricotta Pancakes

1 cup ricotta cheese
3 eggs
2 T oil
1/3 c flour
2 t honey
1/4 t salt
butter for frying

Combine all ingredients in a blender jar and blend until smooth, about five
min., scraping the sides of the jar as needed. Or sieve the cheese into a
bowl.

Beat in the remaining ingredients until smooth.

Fry 3" cakes on a well-buttered surface on med. heat; turning when bubbles
appear.

Serve at once with honey or jam...
