Coconut oil is great for cooking because it withstands high temperature.  It
has great taste and adds to the flavor of things like pan fried chicken and
shrimp.  It has high saturated fat, but that's the only down side.

I cook with it all the time.  I find that it works much better then
Vegetable oil.l.
