Hi Katie and list. I live in Michigan. I am not much of a cook
but would like to be. i don't really have any recipes for using
coconut oil. What I do know from what I have read is that the
oil should be cold pressed unrefined and preferably organic.
Websites that i have looked at say that the coconut oil you can
buy at the grocery store is probably refined and is not the way
to go. I bought mine from amazon. I think the brand I am using
is Nutiva. It is solid when it is below 75 degrees or somewhere
around there and liquifies at temps above that. From what I have
read on forums coconut oil is all some people use. They use it
in place of butter, and vegetable oil. It does have a high fat
content but it has medium chain triglycerides vs the long ones.
I guess they metabolise differently. When I had my english
muffin the other dy I use coconut oil instead of butter or
margarine and then put peanut butter on it. Then a different
time I put the peanut butter and the coconut oil in a bowl and
popped it in the micro for a few seconds mixing them together.
Then I just dipped my muffin in the bowl. Either way the coconut
oil gives a great flavor to the peanut butter.
I might try scrambled eggs with the coconut oil today.

just interested if anyone has cooked with coconut oil in place

haven't cooked really with it. I have used it in place of
butter on
english muffins with a peanut butter. It is really good that
way. I have
also used it on my popcorn in place of butter. When I don't
burn the
popcorn it tastes like what you get at the movies.
